When I was cooking full-time, I met chefs who were brilliant in the kitchen but heartbroken outside of it; missing their kids' soccer games, searching for ways to cook for real families on their own time instead of restaurant rushes. When I met parents, I saw the other side: chicken nuggets in the car on the way to those same games, wishing for something better but too stretched to make it happen.
